Advanced French Chocolate Showpiece
Description
The French Chocolate Showpieces seminar is designed to give students a hands-on experience creating and building chocolate showpieces. Students will explore/learn the many techniques and key components that go into the design and production of a chocolate showpiece. Students will expand on their knowledge of tempering chocolate, the casting process, modeling, carving, volutes décor creation, and vertical assembly.
Students will learn to create chocolate showpiece decorations such as flowers and flower petals and learn the technique of chocolate spraying. This will culminate in the execution and assembly of a chocolate showpiece.
Classes are Monday – Thursday
Choose from three shifts*
- Morning (7:45am-12:30pm)
- Afternoon (12:30pm-5:15pm)
- Evening (5:15pm-10:00pm)

For the duration of your course, uniforms, including a chef hat, jacket, and apron, will be loaned to you.

Please wear black or dark-colored pants and close-toed, non-slip shoes.
- What time should I arrive at the school?
Please arrive 15 minutes before your class starts.
